This is dinner for Tuesday 2 March 2010. It’s radiator pasta with my own sauce recipe. This first picture shows all the ingredients as listed here:
- 1/4 cup of extra virgin olive oil
- 2 x 6oz packages of Lightlife Chickn Strips (soy)
- 1 Tofurky Italian Sausage
- 1 can of A&W Petite Cut Tomatoes
- 1 cup Bertolli Olive Oil and Garlic spaghetti sauce
- Italian Seasoning
- 14 Tassos Pimiento Mammoth (Greek) Olives

Ingredient for Pasta Sauce
Preparation:
Chop Chickn Strips and Italian sausage and saute in olive oil until strips are slightly brown. Add can of tomatoes, chopped olives and Italian seasoning. Let simmer on medium heat for 5 – 10 minutes. Do not over cook. Prepare pasta and put into large bowl. Cover with sauce.

Chow Time
Okay now, about the beer. That’s O’Doul’s, a non-alcoholic beer. No more than 0.5% alcohol. With me/cfs, my body has no tolerance for alcohol. I don’t get drunk, my IQ just drops to that of an egret. I can stand and look around but can’t get up and fly off.
The purpose of this blog is to provide a continuing glimpse of how a true vegan eats. I’m not a vegan by choice but a vegan by necessity. That is I am not a vegan because of philosophy but because of health. I have myalgic encephalomyelitis, which at one time was called chronic fatigue syndrome. Because it is a health concern and not a matter of philosophy, I am much stricter with my diet than most vegans. I will try to keep you up to date as to what I’m eating day-to-day. I’ll also post images to let you know what my meals look like. I’m not much of an organic food person, although I do frequently eat organic products.
I have been vegan for about ten years. I came by the diet honestly, have gradually gravitated to it trying to rid myself of the debilitating effects of me/cfs. I had a crippling arthritis and numerous neurological issues, none of which I associated with me/cfs. I first went on a low-fat diet to try to get rid of a few pounds so that it would be easier on my arthritic knees. I couldn’t stay on the low-fat diet but noticed that the less meat I ate, the better my arthritis got. I became a vegetarian but still had score throats that never seemed to fully disappear. I started eliminating dairy, and finally got rid of the score throats. From then on, I checked ingredients on the packages of everything I ate. I eliminated gelatin, casein, and everything else that came from an animal, including honey.
All these diet changes occurred over a number of years, five or so. Ten years ago, I became a strict vegan. The diet solved the following problems: restless leg syndrome, small seizures, eye twitching, muscle twitching, eye-movement induced neurological flashes, plus many more. What it didn’t solve is the fatigue. I still have profound fatigue that is unaffected by my vegan diet.
